Luwak Coffee Plantation

Luwak coffee is coffee brewed using coffee beans taken from the remaining excrement of the coconut civet / civet. These coffee beans are believed to have a distinct taste after they are eaten and pass through the digestive tract of the mongoose. The popularity of this coffee in the Southeast Asian region has long been recognized, but only became widely known among gourmet coffee enthusiasts after publication in the 1980s. Luwak coffee beans are the most expensive in the world, reaching USD 100 per 450 grams

The origin of civet coffee is motivated by the history of coffee cultivation in Indonesia. At the beginning of the 18th century, the Dutch opened commercial plantations in their colonies in the Dutch East Indies, especially on the islands of Java and Sumatra. One of them is an Arabica coffee plantation with seeds imported from Yemen. During the era of β€œForced Cultivation” or Cultuurstelsel (1830-1870), the Dutch forbade native plantation workers from picking coffee fruit for personal consumption, but local people wanted to try the famous coffee drink. Then the plantation worker finally discovered that there was a kind of ferret that liked to eat coffee, but only the flesh was digested, the epidermis and the coffee beans were intact and undigested. The coffee beans in the civet droppings are then picked up, washed, roasted, ground, then brewed with hot water to create civet coffee.[2] The news about the enjoyment of this aromatic coffee finally reached the Dutch owners of the plantations, so this coffee became a favorite of the Dutch rich. Due to its rarity and the unusual manufacturing process, luwak coffee has been an expensive coffee since colonial times.

As market demand increases, civet coffee produced by wild civets is increasingly difficult to obtain. This has encouraged business actors to specifically cultivate civets so that they can extract the coffee beans. They produce coffee in the following stepsΒ 

Selecting good quality coffee cherries to feed the civet. Then the fruit is washed and cleaned.
After that the coffee fruit is given to the mongoose. This animal will still choose it again. The mongoose has a keen sense of smell. He knows the best coffee cherries worth eating.
After that, wait for the mongoose to release its feces or excrement. Stool collection is usually done in the morning.
Feces containing coffee beans are collected and cleaned in running water. Then dry the coffee beans in the sun to dry. Coffee beans from civet droppings still have a layer of horn that must be further processed.
